Sorry, all recipes are strictly secret and can only be extracted from us by asking nicely! Note: we use only very high quality meets and spices. We purchased organic lamb from Sholome Orchards and organic pork from Sunset Acres farms. ------------------------------------------------------------------ Sweet Italian: A traditional favorite with fennel, basil, garlic, and red wine. Chipotle: Smoked jalapeņo chilies with roasted garlic. Argentine: A beef sausage, traditional in Argentina. Has oregano, thyme, and salt. Spicy Lamb: Yum. A little spicy, but great flavors of cumin, sun dried tomatoes, pine nuts, and garlic. Chicken Pesto: Just like the pasta! A green delight made with fresh basil, garlic, pine nuts, olive oil, and parmesan cheese. Hot Italian: The traditional Italian hot sausage. Lots of red pepper, garlic, and secret spices. Gyro: Leave it to the Greeks. Beef and lamb with anise, oregano and lemon flavors. Chaurice: Louisiana is hot all year, and their sausages are hot too. Spicy hot with lots of chili flavors. ICE CREAM: Home made, chocolate, cinnamon, vanilla, and a seasonal fruit (to be determined). Tuscan: From the hills of Italy to the sea shore, this sausage reflects the varied landscapes of Tuscany. Pork sausage with sun dried tomatoes and a touch of anchovy. Santa Fe: Santa Fe New Mexico is famous for fresh roasted peppers. This sausage combines pork and chicken with 4 types of fresh roasted chili peppers. It's a bit spicy and very interesting. Chicken Apple: The healthy choice! This sausage is very low in fat. Even the chicken skin is removed before processing. The moisture is retained with apple cider and apple bits. Hints of cinnamon and sage round out the flavors. Buffalo: Okay, the recipe calls for buffalo, but we substituted beef...don't sue us. The flavors are exquisite. Juniper berries combine with various peppers to make this sausage like no other you'll ever taste! Polish: This is a very traditional Polish sausage with pork and beef. Hints of garlic and thyme bring you back to the old country. Chicken Jalapeņo: One of our favorites. Lots of jalapeņo peppers, cilantro, white wine, and lemon zest. Swedish Potato: Another old-country recipe with beef and pork. The potato helps retain moisture, so the fat content is kept low.
